Cassia is taken from a dried inner bark of cassia tree, peeled of its outer skin layer and can be harvested all year around.  Cassia is also known as Cinnamon.

The Use of Cassia

Around the world, Cinnamon is commonly use in cookery as a condiment and flavoring material.  Small pieces of cinnamon have been used in preparation of many popular dishes in Asian and Chinese cuisine as one of marinating ingredients in chicken, fish and meats.
